This coffee is processed through a carefully managed anaerobic fermentation in bio-fermenters for 48 hours, allowing native terroir-specific microbes to shape its flavor profile organically. Following fermentation, the coffee is slow-dried on raised beds for 29 days, using a natural processing method that builds sweetness, texture, and a clear expression of origin.
